Almost the end of July and time to experiment. We must stick to our blog name and try some new things.
We begin with a nice young and tender zucchini that Terry picked this afternoon. Every summer we make cucumber salad using my grandmother's recipe and enjoy it all summer. A few years ago I experimented by freezing the salad and we like it even better than the fresh recipe. The flavors blend while in the freezer and we can enjoy cucumber salad the whole year.
Why not try it with zucchini?
Here is the first ever zucchini salad at the Mills home. The zucchini was sliced and placed in a container. A little salt and pepper was added. Then the recipe calls for equal amounts of sugar, water and cider vinegar. If you use equal parts, you can use any size container. Place lid onto container and shake well. We allow the container to sit in the refrigerator overnight in order to draw out moisture from the cucumber or in this case, zucchini. Tomorrow it will be placed in the freezer. Because this is a trial, we will thaw it after a week or two in order to decide if this trial was a success or an error.
Yesterday we harvested enough cucumbers to be able to make three containers of salad. These are on their way to the freezer to be enjoyed during the winter,
