Finally....Cucumbers


 It's been almost a week since the last post on this blog.  I would imagine that there is a limit to how many photos of green beans that you want to see. Green Bean update: Terry has been picking beans almost every other day and we now have  30 packets in the freezer to be shared with Rebecca.

We finally got cucumbers.  Yea!  The photo above shows three of the four cucumbers that Terry picked this morning along with four of the five zucchini.  We were concerned that we weren't going to get cucumbers this year since germination was slow and the weather didn't cooperate. 

These cucumbers are called "Pick a Bushel" and bought from Park Seed Company.  They never get bitter and have a very good taste.  We ate a half of a cucumber at lunch today before we had time to take the photo.

Tomorrow I will flash freeze the zucchini and then vacuum pack the slices.  We haven't decided how to use the cucumbers.  Normally I make cucumber salad but we still have a few containers in the freezer from last year.  We aren't sure how many cucumbers we will be able to harvest this year so we might just enjoy eating them.



The above photo shows what happened to today's fifth zucchini.  I have been experimenting with various ways to serve zucchini.  This recipe is easy!  Sliced zucchini mixed with a spoon of olive oil in a baggie. I add a little salt and pepper and then either Mrs. Dash "Garlic and Spice" or Mrs Dash "Italian Medley" plus a sprinkle of Sargento grated Parmesan cheese. Mix everything together in the baggie until evenly coated. Pour into baking dish and sprinkle a little more Parmesan cheese on top. Bake 400 degrees for about 25 minutes.
Note:  I prefer the "Italian Medley" but Terry likes the more spicy "Garlic and Spice".

We have a small counter top oven for use on hot days. I was so excited to find on Amazon the glass baking dish shown above.   It is about 5 and 1/2 inches by 9 inches.  The best part is two of these  gems will sit side by side in the little oven.  What possibilities!
