Mid July and the two zucchini plants are beginning to produce their "fruit" rather abundantly. We have only one yellow squash plant and this is the first offering from it. Most of these beauties will be cubed, blanched and frozen this afternoon for winter stir-fry but one will turn into something sweeter.
You guessed it! Two loaves of zucchini raisin bread. This evening I will make two more loaves. I only have two loaf pans so must wash pans between bread baking. Hmmmm, that might be something for my Christmas list. I use only stainless steel pans and they are not cheap. When I take the zucchini bread out of the freezer, I will drizzle frosting over the top before serving.
Now, it is time to get busy preparing the other zucchini and yellow squash for the freezer.
